Sourdough Bread Starter
1 Pkg. dry yeast in 1/2 cup warm water 2 cups all-purpose flour, sifted
2 cups lukewarm water 1 tbs. sugar
1 tsp. salt
Starter
In a mixing bowl, put yeast softened in 1/2 cup warm water, stir in flour, 2 cups lukewarm water, sugar, & salt. Beat with mixer at low speed until smooth. Let stand for 4 days at room temperature, stirring 2 or 3 times a day. Starter should have a yeasty , not sour, smell.
Keep starter in refrigerator until feeding time. Feed the starter every 3 or 4 days (can go as long as 5 days) with the following mixture.
Mix the following in a separate bowl & add to starter.
3/4 cup sugar 3 TBS instant potatoes
1 cup warm water
Let this sit out all day or all night. At this time take out one cup of starter to make bread. If you don't want to make bread, give away a cup of starter or throw it away. One cup must come out.
Sourdough Bread
To make bread, place the following in a large bowl with a cover.
1 cup starter 1/2 cup sugar (or 1/4 cup if preferred)
1/2 cup canola oil 1 tsp. salt
1 1/2 cups warm water 6 cups bread flour
Mix above ingredients well. Spray top with cooking spray. Cover & let it sit out all night or all day. Spray dough with cooking spray & knead to a good consistency. You cannot knead too much. Spray loaf pans with cooking spray & divide dough into pans. Spray top of loaves with cooking spray. Cover with a clean towel & let sit out all day or all night,
You can make rolls instead of loaves of bread if you desire.
Bake in a preheated 325° oven for approximately 25 minutes. Makes 3 to 5 loaves depending on size of pans.
Remove bread from pans & cool on a wire rack.
Example:
Sunday Night............feed starter
Monday Morning......add flour mixture
Monday Night..........Make Bread
Tuesday Morning.....Bake Bread
