5 chicken breast, boneless, skinless
1 cup flour
1 tbl black pepper
1/2 tsp red pepper flakes
1/2 cup soy sauce
2/3 cup white granulated sugar
3 garlic cloves, pressed
oil for frying
1 lb mushrooms, sliced
1 onion cut up
Mix the soy sauce, sugar, red pepper flakes and the garlic together in a small bowl. Should be thick. Chill for two hours.
Cut chicken into bite size pieces. In a large baggie, add the flour and black pepper.
Put chicken into bag of flour, shake bag to coat chicken well.
Heat a skillet with about 1/2 cup oil til very hot.
Cook chicken quickly browning on all sides.
Remove to paper towels to drain.
Put chicken into a large caserole dish, cover with mushrooms and onions. Stir the soy sauce mixture and pour over the chicken mushroom onions. Bake in preheated oven for about 35-40 minutes.
The soy sauce mixture will thicken and the sugar will melt making a nice glaze sauce.
When baking is finished, toss the chicken and vegatables to coat well with the sauce. Serve over a nice rice pilaff or white rice.
