Hot Artichoke Spinach Dip

2 cans artichoke hearts in water

1 8 oz pkg cream cheese, softened

1 cup grated monterey jack cheese

1 cup heavy cream

1 cup fresh grated parmesan cheese (not the canned)

1/4 cup butter

6 garlic cloves, pressed

1 pkg chopped spinach, thawed and completely drained of all moisture

1/2 tsp red pepper flakes


In a medium skillet, melt butter, add cream and parmesan cheese. Whisk until cheese is melted.

In a large bowl, mix all other ingredients. Quarter the artichoke hearts and mix in. Pour the cream parmesan cheese mixture into the bowl with the rest of the ingredients, add the spinach and mix well.

Spoon into a caserole dish, cover and bake for about 20 minutes @350 F.

Serve with sourdough rounds, or assorted crackers.
