Hummingbird Cake
3 Cups flour
2 Cups sugar
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
3 eggs, beaten
1 1/2 Cups cooking oil
1 1/2 tsp. vanilla
1 8oz crushed pineapple, undrained
1 Cup chopped nuts
1 Cup chopped bananas, (2)
Combine dry ingredients, add beaten eggs & oil. Stir til moist, do not beat. Add vanilla, pineapple & nuts.
Grease and flour cake pans, 3 - 8"round; 2 - 9"round; or a 9x13" pan. Bake at 350* for 25-30 min. Cool before frosting with Cream Cheese Frosting.
Cream Cheese Frosting
1 8oz pkg cream cheese
1 st. oleo
1 tsp. vanilla
sprinkle of salt
1 lb powdered sugar
Mix and beat and spread on cooled cake.

1 cup vegetable oil
1 1/2 teaspoons vanilla
1 (8 oz) can crushed pineapple with syrup
1 cup pecans, chopped
Combine flour, sugar. soda, salt and cinnamon; add eggs and oil, stirring until flour mixture is moistened. DO NOT BEAT. Stir in vanilla, pineapple, pecans, and bananas.
Bake in 3 greased and floured 9-inch cake pans at 350 degrees for 25 to 30 minutes, or until a wooden toothpick inserted in center comes out clean. Cool in pans 10 minutes; remove from pans, and cool completely.
Cream Cheese Frosting
1 (8 oz) package cream cheese, softened
1/2 cup margarine, softened
1 (16 oz) box powdered sugar, sifted
1 teaspoon vanilla
1/2 cup pecans, chopped
Combine cream cheese and margarine, beating until smooth. Add powdered sugar and vanilla; beat until light and fluffy. Spread between layers and on top and sides of cake. Sprinkle pecans on top.

1 1/2 tsp. vanilla
8-oz. can crushed pineapple, drained
1 cup chopped walnuts
2 cups diced bananas
Cream Cheese Frosting:
8-oz. pkg. cream cheese
2 cups powdered sugar
1 tsp. vanilla
1/2 cup walnuts
To prepare cake, combine all dry ingredients in a large bowl. Add eggs and oil and stir until moist. Do not beat. Stir in vanilla, pineapple, walnuts and bananas.
Spoon into greased 9 x 13" pan.
Bake at 350 degrees for 25-30 minutes. Cool.
To prepare frosting, cream together cream cheese, powdered sugar and vanilla. Fold in walnuts.
When cake has cooled, frost and serve.
