Here's my recipe...
1 pkg southern style hashbrowns
8 oz container of sour cream
1 can cream of chicken soup
1 med. onion, chopped
8 oz shredded cheddar cheese
Mix it all together and place in a 13x9 pan (spraying the pan with cooking spray will help with clean-up). If you like the top crispy, top the casserole with crushed potato chips, ritz crackers, corn flakes, whatever...then drizzle with melted butter.
I bake it covered at about 375 for 30 minutes, then I take the cover off for another 30 minutes, or until done.
