Pecan (or Cashew) Brittle
This is a microwave recipe
Ingredients
1 cup sugar
1/2 cup light corn syrup
1/8 teaspoon salt
2 cups pecan halves or cashews
1 teaspoon margarine or butter
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 teaspoon baking soda
In greased 2-quart glass measure, cook sugar, corn syrup, and salt on High 2 to 3 minutes until boiling.
Cook 4 minutes.
Stir in nuts, butter, vanilla, and cinnamon.
Cook 2 minutes.
Immediately, stir in baking soda until light and foamy.
Quickly pour onto greased cookie sheet; spread.
Cool; break into pieces. Makes 1 pound.
CLEAN-UP TIP: After cooking the candy, always allow the glass measure to cool to room temperature before cleaning. Do not attempt to chip the hardened brittle off the glass. For easiest clean-up, fill the measure with water, then heat on High 10 minutes. Sugar will soften and wash off quickly.

Cashew Brittle
2 c. sugar
1 c. butter
1 c. white corn syrup
2 c. cashew pieces
1/2 c. water
1 tsp. soda
In heavy sauce pan, cook sugar, syrup and water. Cook and stir until sugar is dissolved. Bring to boiling, blend in butter. Stir constantly, and add nuts when it reaches 280 degrees. (This takes quite a while, so get comfortable) Stir continuously until it reaches 300 degrees.
Remove and quickly stir in soda. Pour onto two buttered sheets, spreading as thin or thick as you wish. Let cool to room temperature and break into pieces.
