E. J.'S CHOCOLATE PEANUT BUTTER PIE

CRUST
1 9" Graham Cracker Pie Crust
FILLING LAYER
1 pk Sugar-free vanilla pudding*
2/3 c Nonfat dry milk powder
1 1/2 c Cold water
1/2 c Chunky peanut butter
FILLING LAYER
1 pk Sugar-free instant chocolate
Pudding mix*
2/3 c Nonfat dry milk powder
1 1/4 c Cold water
TOPPING
2 c Regular whipped topping
*4 serving size Filling Layer 1: Add dry milk powder to pudding mix.
Add water and mix until smooth. Beat in peanut butter. Spread in
bottom of pie shell. Filling Layer 2: Use same bowl from layer 1 (no
need to wash it). Add dry milk to pudding mix. Stir in water. Mix
until smooth. Pour on top of peanut butter layer. Topping: Spread on
top of pie. If desired, garnish with chocolate curls made from 1 oz.
of chocolate bar or mini chocolate chips. Chill before serving. Each
serving provides: l/2 Bread, 1 Fat, 1/2 Milk, 1 Protein, 150 optional
calories.

DEEP CHOCOLATE CUPCAKES WW

Yield: 12 Servings
6 lg Prunes
- pitted
3 lg Egg whites
1 1/2 ts Vanilla extract
18 tb Flour, all-purpose
3/4 c Sugar, granulated
1/2 c Cocoa powder, unsweetened
1 1/2 ts Baking powder
1/4 ts Baking soda
1/4 ts Salt
1 1/2 tb Sugar, powdered
Preheat oven to 350F. Line 12 2-3/4" muffin cups with paper liners.
In food processor, puree prunes and 1/2 cup water until smooth.
Scrape puree into large bowl.
With electric mixer, beat together prune puree and 1/2 cup water.
Add egg whites and vanilla; beat until thoroughly combined. Stir in
remaining ingredients; mix completely. Spoon batter evenly into
prepared cups, filling each about 2/3 full. Bake 10 to 12 minutes,
until toothpick comes out clean. Remove from pan; cool on rack.
Sprinkle evenly with powdered sugar.
Weight Watcher Exchanges: 1/2 Bread, 80 Optional Calories.
Nutritional Analysis per serving: 122 calories, 3 g.
protein, 28 g. carbohydrate, 1 g. fat, 130 mg. sodium, 0 mg.
cholesterol.

CHOCOLATE SNACK BAR

1 pk Alba, chocolate
3/4 oz Oats or Grape-Nuts
2 tb Raisins
1 tb Peanut butter
2 tb Warm water
Combine all ingredients and form into a bar. Place in freezer until
firm. 1M, 1B, 1P, 1Fr, 1Fa

PUMPKIN MUFFINS #3

1 c Pumpkin
1 ts Cinnamon
2 Eggs -- or egg substitute
1 ts Vanilla extract
6 tb Flour
1 ts Baking powder
4 tb Raisins
1/2 c Carrots -- grated
2/3 c Powdered milk
10 pk Sweet & Low
2 ts Pumpkin pie spice
Mix all ingredients. Spray muffin tin with Pam. Divide equally. Bake
at 350 degrees F. for 25 minutes. Makes 12 muffins. Each serving - of
six (6) muffins, YES 6 MUFFINS, equals the following Weight Watchers
Exchanges: 1 Bread, 1 Fruit, 1 Milk, 1 Protein and 1 1/2 Vegetables.
This is a no fat recipe! You may substitute Egg Beaters for the eggs
and Equal for the Sweet and Low. These freeze well.

BEST EVER FUDGE CAKE

1 1/2 c Flour
1 1/2 c Buttermilk
1 1/4 c Sugar
1/2 c Cocoa
1/4 c Diet margarine
2 tb Diet margarine
2 tb Margarine
1 ts Margarine
2 lg Eggs
2 ts Baking soda
1/2 ts Salt
1 ts Vanilla extract
8 ts Powdered sugar
1. Preheat oven to 350¡. Spray Bundt pan with Pam. 2. Cream
margarines and sugar. Add eggs. 3. Combine dry ingredients and add
to mixture. 4. Add buttermilk. Mix well and pour into sprayed Bundt
pan. 5. Bake 40 minutes at 350¡. Cool 15 minutes and then remove
from pan. 6. Sprinkle with the powdered sugar before serving.
