SOURDOUGH-PUMPKIN-MINCEMEAT BREAD

4 c. flour
1 1/2 c. sugar
2 Tbsp. pumpkin pie spice
2 tsp. baking soda
1 1/2 tsp. salt
1 1/2 c. brown sugar, packed
4 eggs, beaten
2/3 c. water
1/2 c. sourdough starter
1 c. cooking oil
2 c. canned pumpkin
1 1/2 c. prepared mincemeat
1 c. chopped nuts
In large mixing bowl mix together flour, sugar, spice,
baking soda, salt and brown sugar. Make a well in the center.
Mix together eggs, water, sourdough starter, oil and pumpkin.
Add, all at once, to well in dry ingredients. Mix well. Blend
in mincemeat and nuts. Pour into 3 greased loaf pans. Bake at
350 degrees for 1 hour or until done. Makes 3 loaves.

SOURDOUGH BROWNIES

4 sq. sweet baking chocolate
1/2 c. hot water
1 tsp. baking soda
2 cubes margarine
2 c. sugar
2 eggs
2 tsp. vanilla
1 c. chopped walnuts or pecans
1 1/2 c. flour
1/2 tsp. salt
1 1/2 c. sourdough starter
Place chocolate in small pan and add hot water; bring to
a boil, stirring meanwhile. Add soda and mix well. Mixture
will be foamy. Set aside until lukewarm. In a large bowl,
cream margarine and sugar together until fluffy. Add vanilla
and cooled chocolate mixture and nuts. Gradually add flour
that has been sifted with salt. Last of all add the starter.
Beat well after each addition. Grease and flour a 9 x 13-inch
pan and pour batter into it. Place pan in a warm spot for half
an hour. Preheat oven to 350 degrees and bake for 35 to 40 minutes.

SOURDOUGH BISCUITS

2 c. Sourdough Starter (recipe
in this book)
1 1/2 c. flour
1 tsp. baking powder
1 tsp. sugar
1/2 tsp. baking soda
1/2 tsp. salt
1/4 c. butter
1/2 c. milk
Cut soft butter into dry ingredients until mixture
resembles cornmeal. Stir in milk and sourdough batter and mix
well, forming a ball. Knead dough about 30 seconds. Roll
dough out about 1/2-inch thick. Cut into 2-inch circles.
Place on ungreased sheet or pan. Cover and let set about 30
minutes. Brush lightly with melted butter and bake at 400 degrees for
15 minutes or until biscuits puff and turn brown.
