Pineapple-Cream Cheese Cake Dessert
1 pkg. yellow cake mix
1 - 8 oz. pkg. cream cheese
2 c. milk
1 small pkg. instant lemon pudding mix
1 tsp. vanilla
1 large 16 oz. can crushed pineapple
1 - 4 oz. can moist coconut flakes
1 - 8 oz. pkg. Cool Whip
Bake cake in a 9 x 13 inch pan for 15 minutes at 350 degrees. Cool cake will be thin. Have cream cheese at room temperature. Beat cheese with milk, pudding and vanilla until thick. Spread mixture over cake. Spread drained pineapple on top of this mixture. Then top with Cool Whip and coconut. Refrigerate. Make a day ahead. Can also freeze ahead.

Pineapple Cake
2 eggs, well beaten
2 cups sugar
2 cups flour
2 tsp. baking soda
1 tsp. vanilla
1 can (#202) crushed pineapple, do not drain
Cream Cheese frosting - see below
Add sugar to beaten eggs. Sift flour and baking soda together and add to sugar-egg mixture. Mix well. Add pineapple and vanilla. Pour into a greased 9 x 13 inch pan and bake at 350 degrees for 40 - 50 minutes, or until toothpick comes out clean. Cool and frost with Cream Cheese frosting.
Cream Cheese Frosting:
1- 3oz. pakg. cream cheese, softened
1 stick margarine
1/2 tsp. vanilla
1 - 1lb. box powdered sugar
Cream together the cream cheese, margarine and vanilla. Add powdered sugar until desired consistency is reached.
