Hot Outdoor Barbecue Ideas

Barbecue Marinade for Steak
Try this delicious, non-traditional marinade at your next summer party. It's sure to be a hit!

Ingredients
1/3 cup lite soy sauce
1/3 cup cooking sherry
1/3 cup orange or pineapple juice
2-3 cloves of garlic, pressed
1/4 cup brown sugar
1/4 teaspoon ground ginger
1/4 teaspoon ground black pepper
4–6 generous drops of liquid smoke
4 8-ounce steaks

Preparation
In large bowl, mix all ingredients (except steaks) well.
Add steaks to bowl; allow to marinate at least 30 to 60 minutes.
Cook on grill to taste.
Choosing the right steak
The best type of meat for this recipe is already tender. Look for steak specifically marked for barbecue. Other steaks that will work well are New York and Filet Mignon. Steak marked "Prime" will be the most tender of all but will be expensive.

Grilled Potatoes
These potatoes will melt in your mouth.

Ingredients
4 medium to large cleaned, unskinned potatoes (preferably red or Yukon gold)
1 Vidalia onion, sliced
1/2 stick butter, sliced into 4 tablespoons
Dill weed
Salt
Freshly ground black pepper
4 sections of aluminum foil (12 to 14 inches each)

Preparation
Pre-heat grill.
Slice potatoes into 6 to 8 pieces each.
Place potato wedges onto open aluminum foil sections; top with onions.
Sprinke with dill, salt, and pepper to taste.
Top each with a slice of butter.
Fold over top of aluminum foil loosely and crease, then fold up ends of foil.
Place on medium-hot grill.
Cook for 8–10 minutes. Check 1 packet after 8 minutes. If the potatoes are not slightly browned, cook longer. Potatoes taste best when slightly browned.
Grilled Corn on the Cob
Try this spin on an old favorite.

Ingredients
4 ears of corn
Butter
Curry powder
Aluminum foil

Preparation
Butter each ear of corn, and sprinkle with curry powder.
Wrap each ear of corn in a sheet of aluminum foil.
Place on grill for approximately 10 minutes, or until cooked.
Note: The corn is even sweeter if you soak it in milk before cooking.
