HOT DOG RELISH

--------------------------------------------------------------------------------
3 pt. chopped red tomatoes
3 pt. chopped green tomatoes
3 pt. shredded cabbage
3 red peppers
3 onions, sliced
4 stalks celery, chopped
1/2 c. salt

Soak ingredients overnight. The following morning,
drain ingredients and add:
3 pt. sugar
3 pt. vinegar
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 c. mustard seed
2 Tbsp. horseradish
Cook 20 to 30 minutes and jar.

HOT DOG RELISH

4 c. ground onions
1 medium head cabbage
10 to 20 green tomatoes
1/2 c. salt
6 c. sugar
2 Tbsp. celery seed
2 Tbsp. mustard seed
12 green peppers
6 sweet red peppers
1 1/2 tsp. turmeric
4 c. cider vinegar
2 c. water

Grind vegetables using coarse blade. Sprinkle with 1/2
cup salt; let stand overnight. Rinse and drain. Combine
remaining ingredients; pour over vegetable mixture. Heat to
boiling. Simmer 10 minutes. Seal in hot, sterilized jars.
Makes 8 to 10 pints.

SWEET HOT DOG RELISH

4 large green sweet peppers
2 large onions
2 1/2 c. sugar
1 tsp. turmeric
1 qt. cucumbers
1 Tbsp. salt
3 c. white vinegar

Cut peppers and remove seeds. Grind cucumbers, peppers
and onion and drain. Then mix cucumbers, pepper, onions, salt,
sugar, vinegar and turmeric. Cook until thick. Pour in jars
and seal.
