1 Baked Pie Shell -- cooled
2 tablespoons Quick-cooking tapioca
1 1/2 quarts Fresh strawberries
1 cup Sugar
1/2 cup Water
Whipped Cream
Note: I add 1 Tblsp. margarine to the thickened sauce before pouring over
berries in pie shell).Puree 1 1/2 cups berries in blender or food
processor. Combine sugar and tapioca, blending well with a fork. Stir into
pureed berries. Add 1/2 c.water; blending well. Microwave on HIGH for 2
minutes. Then stir with fork or wire whisk. Microwave 2 more minutes or
until thick. Stir to smooth. Arrange remaining berries in bottom of baked,
cooled pie shell. Spoon or pour sauce over fresh strawberries .Chill and
serve with whipped cream.

Mile High Strawberry Pie

Ingredients:
1 package (10 to 12 ounces) of frozen strawberries with sugar (Do not use fresh)
2 egg whites
1/4 cup sugar
1 Tablespoon lemon juice
1-1/2 cups whipped cream
1 large deep-dish baked pie shell
Beat frozen strawberries, egg whites, sugar and lemon juice with an electric mixer for 15 minutes. Fold in 1 cup whipped cream. Gently pour into pie shell and pile very high.
Put in freezer for at least 24 hours. Cut into 8 servings from freezer. Top each piece with a Tablespoon of whipped cream and a fresh strawberry.

Fresh Strawberry Pie
(makes 8 servings)
1 0.5 ounce (15 g) package sugar-free strawberry flavored gelatin
1 1/2 cups (360 ml) boiling water
3 cups (498 g) sliced fresh strawberries
2 cups (453 g) plain nonfat yogurt
1 9-inch (22.5 cm) graham cracker crust
8 perfect whole strawberries, washed but not hulled
In a large bowl, dissolve gelatin in boiling water. Chill until slightly thickened, about 15 to 20 minutes. Stir in strawberries. Chill another 10 minutes.
Fold in yogurt and pour mixture into graham cracker crust. Chill until firm or at least 4 hours.
To serve, cut into 8 wedges and top each serving with a whole strawberry. Serve cold.
Per serving: 177 calories (33% calories from fat), 6 g protein, 7 g total fat (1.6 g saturated fat), 24 g carbohydrates, 2 g dietary fiber, 1 mg cholesterol, 208 mg sodium
