HASHBROWN CASSAROLE (CHEESY POTATOES)
What you will need:
32 oz. bag of hash brown potatoes
1/2 cup melted oleo
1/2 cup chopped onions
2 cups grated cheddar cheese
1 pint sour cream
1 can cream of chicken soup
1/4 tsp salt and pepper
Preparation:
Combine all ingredients in a casserole dish and bake in the oven for 50 minutes at 350 degrees.
Now for those watching your weight, um whatever, you may use fat-free sour cream, and I actually use the Healthy Choice cream of chicken soup. Gillian, if you want to use Tofu sour cream, (do they even make that?), or if you'd rather use goat cheese instead of cheddar, go ahead and try it, but please let me know how that works out!! One more helpful hint: I buy the onions already chopped up, as bad as a cook and as clutzy as I am, the less knife usage the better for me!! Enjoy everyone!!

PARTY POTATOES
What you will need:
3/4 cup sour cream
2 tablespoons finely chopped onion
1 (3 oz.) pkg. cream cheese
1 garlic clove, minced
Dash of pepper
2 cups water
1/4 cup butter
1/4 teaspoon salt
1 cup milk
2 2/3 cups instant potato flakes chopped fresh parsley, if desired
Preparation:
In a small bowl, combine sour cream, onion, cream cheese, garlic and pepper; blend well - set aside.
In a medium saucepan, combine water, butter and salt; bring to a boil. Remove from heat; stir in milk and potato flakes with fork until blended. Add sour cream mixture to potatoes; blend well. Spoon into a serving bowl and garnish with parsley.
Makes 8 (1/2- cup) servings
(These are some of the creamiest potatoes I've ever eaten and taste great with more garlic too!)
