ZUCCHINI SLAW

3 medium zucchini
3 medium yellow squash
1 small red pepper
1/4 c. salad oil
3 tsp. cider vinegar
2 Tbsp. mayonnaise
1 1/2 tsp. sugar
1 tsp. salt
1/4 tsp. pepper
To be prepared day before serving. Cut zucchini, squash
and pepper into matchstick thin strips and set aside. In large
bowl add all remaining ingredients and mix well with a wire
whisk or fork. Add vegetables with a rubber spatula. Gently
toss until well coated. Refrigerate at least 2 hours to blend
flavors. Stir occasionally.
Serves 10, 100 calories per serving.
