CALIFORNIA CHICKEN SALAD

4 c. shredded cooked chicken
breasts (about 4 small
breasts)
2 c. seedless green grapes,
peeled
1/2 c. toasted slivered
almonds
lettuce leaves
paprika

Dressing:
1/2 c. butter
2 c. mayonnaise
1/4 c. minced parsley
1/2 tsp. curry powder
1/4 tsp. minced garlic
pinch of marjoram
salt and pepper to taste

Melt butter in saucepan. Cool to room temperature. In
a bowl, gently stir the butter in mayonnaise, parsley, curry
powder, garlic, marjoram, salt and pepper. In a large bowl,
combine chicken, grapes and almonds. Arrange on lettuce
leaves. Pour dressing on top and sprinkle with paprika.
Serves 4 to 6.

CHICKEN SALAD DELUXE

2 c. cooked chicken, cut up
2 tsp. lemon juice
1 c. diced celery
3/4 c. seedless grapes, halved
1 tsp. capers (optional)
3/4 c. toasted, salted,
slivered almonds
dash of nutmeg
salt and pepper to taste
mayonnaise

Sprinkle lemon juice over chicken and celery. Let
mixture stand at least 1 hour. Mix together lightly with
grapes, almonds, capers, nutmeg, seasonings and mayonnaise.
Pile lightly on lettuce cups. Garnish with a few grapes and
almonds. Serves 4.
