Has anyone froze vegetables ie.cauliflower, broccoli, beans corn etc. without blanching first. I have been told twice that I can just rinse and freeze. Blanching makes them mushy when cooking later. One person was a farmers wife and the other a caterer who also grew vegetables. Please advise and what can the enzimes do if you don't blanch?
