: Rest easy. I have 2 paperback copies of this book which took me years to find and replace. Both are mint but one can go. Here is your recipe:
: Sweet Potato Cake (pg. 231)
: 1 1/2 cup sifted flour
: 2 teaspoons baking powder
: 1/4 tsp. salt
: 2 cups, hot, boiled, mashed sweet potatoes.
: 1/2 cup shortening
: 2 eggs, well beaten
: 3/4 cup brown sugar
: 1/2 tsp. cinnamon
: 1/2 tsp. nutmeg
: 1/2 cup milk
: 1 tablespoon lemon juice
: Combine flour, baking powder, and salt and sift into mixing bowl. To the mashed potatoes, add shortening, eggs, brown sugar, cinnamon, and nutmeg. Beat well. Alternately add the flour mixture and milk, beating well after each addition. Add lemon juice and turn into greased loaf pan. Bake at 350 until done - aout one hour.
