Pineapple Casserole
3-15oz. cans pineapple tidbits or chunks
1 cup sugar
5 Tbsp. self rising flour
1 1/2 cups shredded cheddar cheese
1 stack Ritz Crackers(crushed)
1 stick melted butter or marg.
Drain pineapple, reserve 1/2 cup juice. Place in greased baking dish.
Mix flour and sugar, pour over pineapple. Sprinkle 1/2cup juice over
mixture. Cover with cheese. Sprinkle cracker crumbs on top. Pour melted
butter over all and bake at 350 for 35-40 minutes.
Pineapple Casserole
2 15-ounce cans pineapple chunks,
1 cup sugar
6 tablespoons flour
2 cup shredded Cheddar cheese
4 ounces ritz crackers, crushed
1/2 cup melted butter
Drain pineapple, reserving 1/2 cup juice.
Place pineapple in baking dish. Sprinkle
with mixture of flour and sugar.
Pour reserved juice over top.
Sprinkle with cheese and cracker crumbs.
Drizzle with butter. Bake at 350 degrees for 30
minutes.
Serve as a side dish or dessert.
Yield: 8 servings.
Ritz Cracker Pie
3 egg whites
1 cup sugar
1 tsp. baking powder
pinch salt
20 crackers, crumbled
1 cup pecans
l tsp. vanilla
whipped cream
To stiffly beaten egg whites, add sugar, baking powder, salt,
crackers (crumble by hand for larger crumbs), pecans and vanilla.
Pour into lightly greased 9" pie pan. Bake 30 minutes at 325
degrees. Chill and serve with whipped cream.
