HERMAN CAKE
This is Herman. Feed him the 1st and 5th days with one
cup flour, one cup milk or water, 1/2 cup sugar (more or less)
and stir daily. On the 10th day take out one cup starter for a
friend. To the remaining Herman add:

2 c. flour
1 c. sugar
3/4 c. oil
2 eggs
1/2 tsp. soda
1/2 tsp. cinnamon
2 tsp. baking powder
1 c. raisins
1 c. nutmeats
Or instead of raisins and nutmeats, 2 cups dried fruit
bits.
Combine ingredients slowly. Put in greased 9 x 13-inch
baking pan and swirl a mixture over top, made with:
1 stick oleo, melted
1 c. brown sugar
1 Tbsp. cinnamon
1 Tbsp. flour
Bake approximately 40 minutes at 350 degrees. By putting the
cakes into two smaller pans and baking them a shorter period of
time, you will have one to give to your friend along with the
starter and directions.

HERMAN CAKE

2 c. starter
2 c. flour
1 c. sugar
1 c. nuts
1/2 tsp. baking soda
1 c. raisins
3/4 c. oil
2 eggs
1/2 tsp. cinnamon
1/2 tsp. salt
Glaze for Cake:
1 stick butter
1 c. brown sugar
1/4 c. milk
Boil this mixture for 5 minutes. Pour over cake when
taken out of the oven. You can make rolls, sticky buns,
muffins or coffeecake.
Mix all cake ingredients except nuts and raisins. Add
them last. Pour into well greased and floured 9 x 13-inch pan.
Put Topping on before baking.
Topping:
1 Tbsp. flour
1 c. brown sugar
1 Tbsp. cinnamon
1/2 c. melted margarine
Mix together and pour on top of dough and swirl with a
fork. Bake at 350 degrees for 35 to 40 minutes. Cake will pull away
from sides of pan when done.

HERMAN'S CAKE
(Sourdough Recipe)
On the first day you get Herman you must feed him.
Feeding: 1 cup flour, 1 cup milk and 1/2 cup sugar. Feed him
on the first and fifth day. Bake on the 10th day.
Keep Herman in refrigerator in a large covered bowl.
Stir him everyday because he grows. On baking day, measure out
1 cup of Herman for yourself and feed him and give one cup of
Herman to a friend along with Herman's letter. Then put
remaining 2 cups in a large bowl and add 2 cups in the large
bowl of flour, 1/2 teaspoon soda, 1/2 teaspoon cinnamon, 2
teaspoons baking powder, 1 cup sugar, 2 eggs, 1/2 cup oil and 1
cup raisins and/or nuts. Mix at medium speed until blended.
Pour into greased and floured 9 x 13-inch pan.
Topping Before Baking:

1 Tbsp. flour
1 Tbsp. cinnamon
1/2 c. brown sugar
1/2 c. melted butter
Mix and pour over dough; swirl through with a fork.
Bake at 350 degrees for 35 to 40 minutes.
Optional Glaze for real sweet and sticky goodie: 1/4
cup butter, 1/2 cup brown sugar and 1/8 cup milk. Boil 3 to 4
minutes gently. Spread over baked cake.

CHOCOLATE-SOUR CREAM HERMAN CAKE

1 c. Herman starter
1/2 c. water
3/4 c. dairy sour cream
1 1/2 c. flour
1/2 c. nonfat dry milk (in dry
form)
1/2 c. margarine
3/4 tsp. salt
1 c. granulated or brown sugar
(whichever you prefer)
1 1/2 tsp. cinnamon
1 1/2 tsp. baking soda
2 eggs
4 sq. semi-sweet chocolate,
melted
1 tsp. vanilla
Combine Herman starter, water, sour cream, flour and dry
milk. Put in a warm place (80 degrees to 90 degrees) to ferment for 3 hours.
Cream margarine, sugar, salt, cinnamon and baking soda. Beat
in eggs, one at a time. Stir in the melted chocolate and
vanilla. Combine the 2 mixtures and beat hard for 300 strokes
with a wooden spoon or at low speed on electric mixer until
well blended. Grease 2 (8-inch) square pans and fill each
about half way. Bake in a 350 degrees oven for 45 to 60 minutes,
testing with a toothpick until it comes out clean from the
center of the cake. Cool on cake racks. The cake freezes
well, so one layer can be frozen and the other served. Makes 2
(8-inch) square cakes.
Note: This is a moist, almost spicy cake that is
delicious plain or dusted with confectioners sugar. It could
be frosted instead, if preferred.
