Apple-Pumpkin Streusel Muffins

The combination of apples and pumpkin makes this recipe a perfect
treat for cool autumn days. The muffins go great for breakfast or dessert.

2-1/2 cups flour
2 cups sugar
1 teaspoon soda
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon salt
1/4 teaspoon nutmeg
2 eggs
1 cup canned pumpkin
1/2 cup vegetable oil
2 cups finely chopped, peeled apples
Streusel Topping (recipe follows)

Heat oven to 350 degrees. In a large bowl, combine first seven ingredients.
In small bowl, combine eggs, pumpkin and oil; stir into dry ingredients just until
moistened. Fold in apples. Fill greased or paper-lined muffin cups 2/3 full.
Sprinkle with streusel topping. Bake at 350 degrees for 30 to 35 minutes or
until muffins tests done. Cool 10 minutes before removing from pan.
Makes 24 muffins.
Streusel Topping: In a small bowl, combine 6 Tablespoons flour, 3/4-cup sugar
and 2 teaspoons cinnamon. With a pastry blender, cut in 6 Tablespoons
softened margarine until crumbly.

Apple Pecan Shoo-Fly Pie
1-1/2 cups flour
1/2 cup sugar
1/4 teaspoon soda
1/4 cup margarine
1 cup Maple Syrup (recipe follows)
1/4 teaspoon soda
9-inch unbaked piecrust
2 cups peeled, sliced apples
1/4 cup raisins
1 cup chopped nuts

Heat oven to 375 degrees. In a mixing bowl, combine flour, sugar and soda.
Cut in margarine until crumbly; set aside. Make Maple syrup and stir in 1/4
teaspoon soda. Line piecrust with apple slices; sprinkle with raisins and pecans.
Cover with 1/3 of crumb mixture. Drizzle with 1/2 cup prepared syrup. Repeat
layers and top with remaining crumbs. Bake at 375 degrees for 40 to 45 minutes
or until golden brown.
Simple Maple Syrup
1/4 cup granulated sugar
1/4 cup brown sugar
1 cup water
1/2 teaspoon maple flavoring
In a saucepan, combine sugars and water. Bring to a boil, stirring occasionally.
Add maple flavoring. Cool. Makes 1 cup.


Granny’s Apple Cake with Butter Sauce
2 eggs
2 cups sugar
1/2 cup vegetable oil
2 teaspoons vanilla
2 cups flour
2-1/2 teaspoons cinnamon
2 teaspoons soda
1 teaspoon salt
1/4 teaspoon nutmeg
4 cups chopped, peeled apples
1 cup chopped walnuts
Butter Sauce ( recipe follows)

Heat oven to 350 degrees. In a mixing bowl, combine eggs, sugar, oil and vanilla;
mix well. Combine dry ingredients and add to egg mixture; mix well (batter will
be stiff). Stir in apples and walnuts. Spread in greased 9x13-inch baking pan.
Bake at 350 degrees for 45 to 50 minutes or until tests done. Cool on wire rack.
Cut cake in squares and top with warm butter sauce. Serves 12 to 15.
Butter Sauce
3/4 cup sugar
3 Tablespoons flour
1 cup milk
2 Tablespoons butter (no substitute)
1 teaspoon vanilla extract
In a saucepan, combine sugar, flour, milk and butter; bring to a boil over
medium heat; boil and stir for 2 minutes. Stir in vanilla.

Simple Apple Dumplings
An old fashioned apple dish gets an updated treatment with
convenience products. These delicious dumplings are a
timesaving treat for dessert or brunch.

8-ounce can refrigerator crescent rolls
2 medium apples, peeled & quartered
1 cup sugar
1 cup orange juice
1/2 cup margarine
1/2 teaspoon apple pie spice

Heat oven to 350 degrees. Unroll crescent dough and separate into 8 triangles.
Roll up one apple wedge in each triangle; pinch edges to seal. Place in greased
8-inch square baking dish. In a small saucepan, bring sugar, orange juice and
margarine to a boil. Pour over dumplings. (Dumplings will float to the top.)
Sprinkle apple pie spice over top. Bake, uncovered, at 350 degrees for 20 to
25 minutes or until golden brown. Serve warm.

Apple Raisins Cookies
This home-style fruit and spice cookie can be dressed-up
by spreading with vanilla frosting.

1 package yellow cake mix
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup sour cream
2 eggs
1 cup coarsely shredded apples
1/2 cup raisins
2 to 3 Tablespoons powdered sugar

Heat oven to 350 degrees. In a large bowl, combine cake mix, cinnamon,
nutmeg, sour cream and eggs; blend well. Stir in apples and raisins. Drop
dough by spoonfuls 1-inch apart onto greased cookie sheets. Bake at 350
degrees for 10 to 14 minutes or until edges are golden brown. Immediately
remove to wire rack to cool. When cool, sprinkle with powdered sugar.
Makes about 4 dozen.

This letter was sent to me via email.
I had a very dear friend question my faith in God right after the terrorist attack on America. Her question was simply put, "Where is your God today?"
She was very hurt, as all Americans were, so I tried not to react defensively. Since that moment I have prayed and grieved over the disastrous events. However, I believe I have the answer. I know where my God was the morning of September 11, 2001!
He was very busy. First of all, he was trying to discourage anyone from taking this flight. Those four flights together held over 1000 passengers and there was only 266 aboard.
He was on 4 commercial flights giving terrified passengers the ability to stay calm. Not one of the family members who was called by a love one on one of the high-jacked planes said that passengers were screaming in the background. On one of the flights he was giving strength to passengers to try to overtake the highjackers.
He was busy trying to create obstacles for employees at the World Trade Center. After all only around 20,000 were at the towers when the first jet hit. Since the buildings hold over 50,000 workers, this was a miracle in itself.
How many of the people who were employed at the WTC told the media that they were late for work or they had traffic delays.
He was holding up two 110 story buildings so that 2/3 of the workers could get out. I was so amazed that the top of the towers didn't topple when the jets impacted.
Although this is without a doubt the worst thing I have seen in my life, I can see God's miracles. I keep thinking about my friend and praying for her every chance I have. I can't imagine going through such a difficult time and not believing in God. Life would be hopeless.

Caramel-Apple Skillet Cake
Serve this up-side-down cake warm with whipped topping
or ice cream. Yum!!

2 Tablespoons margarine
5 small (1-1/4 pounds) apples, sliced
1/4 cup sugar
2 teaspoons cinnamon, divided
1/2 teaspoon nutmeg, divided
1 package yellow cake mix
1/2 cup chopped pecans or walnuts
1/4 cup orange juice
3/4 cup water
1/4 cup vegetable oil
3 eggs
Whipped topping or ice cream

Heat oven to 350 degrees. In a 10-inch ovenproof skillet, melt margarine over
medium heat. Combine sugar and 1 teaspoon of cinnamon, 1/4 teaspoon
nutmeg and sprinkle over melted margarine. Arrange apple slices in bottom
of skillet. Cook over medium heat for 5 minutes or until apples are slightly
softened. In a mixing bowl, combine cake mix, pecans, remaining cinnamon
and nutmeg, orange juice, water, oil and eggs; beat until smooth. Gently
pour over apples, spreading evenly. Bake, uncovered, at 350 degrees for 30
to 35 minutes or until tests done. Loosen edges and carefully invert onto serving
plate. Garnish with whipped topping. Serves 12.

Apple Pudding Cake with Cinnamon Sauce
Chock full of apples, this moist cake is almost a pudding and becomes
even more so when topped with Cinnamon Sauce.

1 cup brown sugar
1/4 cup margarine, softened
1 egg
1 cup flour
1 teaspoon soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
2 cups chopped apples
Cinnamon Sauce (recipe follows)

Heat oven to 350 degrees. In large bowl, beat brown sugar and margarine
with electric mixer until creamy; add egg and beat well. Stir in flour, soda,
cinnamon, nutmeg and salt; mix well. Stir in apples. Spread in a greased
8-inch square pan. Bake at 350 degrees for 25 to 30 minutes or until tests
done. Serve warm with warm sauce. Serves 9.
Cinnamon Sauce: In a small saucepan, combine 1/3-cup margarine, 2/3 cup
sugar, 1/3 cup cream and 1/2 teaspoon cinnamon. Heat over medium heat
until margarine melts and sauce is hot, stirring frequently.
