Spiced Carrot Snack Cake
1 pkg (17.4) ounces cinnamon swirl quick bread mix
2 large carrots, shredded-1 cup
1/2 cup natural applesauce
2 eggs
3 tablespoons vegetable oil
Heat oven to 350
Spray a 9 inch square pan.
mix 1/2 cup bread mix, and half of the cinnamon mix
Set remaining cinnamon and set aside
peel carrot with and shred to make 1 cup
add applesauce, egg and oil to the mixture.
stir till blended, 50 to 75 strokes.
Spread in baking pan.
Sprinkle remaining cinnamon on top.
Bake 25 to 30 minutes or center comes clean with toothpick.
Cool completely.
Cut in squares and serve.
Left all the bowl and gadgets out as I tryped this.
