Potato Sourdough Starter
4 c Unbleached Flour
2 tb Salt
2 tb Sugar
4 c Lukewarm Potato Water

Boil some potatoes for supper, save the potato water, and use it lukewarm with enough unbleached flour to make a thick batter. without yeast.

This is a good way to make it in camp, where you have no yeast available and want fast results. This is also the way most farm girls made it in the olden days. Let stand a day or so, or until it smells right.

Amish Friendship Muffins
1 cup Amish batter *
2 cups flour
3/4 cup oil
1 tsp baking soda
2 tsp baking powder
1 cup sugar
3 eggs
1-1/2 tsp cinnamon
2 tsp vanilla

Stir Well.

Add:
1 cup nuts, chopped

OPTIONAL
1 cup apples, chopped
1 cup raisins, or
1 cup blueberries

Mix Well. Put into muffin tins well greased if not using liners. Sprinkle with topping on each
muffin and bake at 350 degrees F for 15-20 minutes or until done.

TOPPING

1 cup brown sugar
1/2 cup flour
1/4 cup margarine

Mix well and sprinkle over tops of muffins before baking.

* Note: This recipe requires the Amish basic batter. This is the batter that results after day 10 in the basic Amish Friendship Bread recipe
