You can use yeast nutrient: 1/2 tsp/gal or as otherwise directed by the packet available from winemaking suppliers...
I've made about 44 gal of crabapple wine but the alcohol level is too high to be palatable. I didn't add water to the initial fermentation mix so the tartness/acidity is also high. I've tried adding up to 25% water to this with good improvement in the pallatability and less kick to the sip. Does anybody have any suggestion on an optimal dilution? Thanks.
