TURKISH DELIGHT

1/2 c. cold water
1/2 c. boiling water
2 c. granulated sugar
food coloring
juice of 1 orange
juice of 1 lemon
grated rind of 1 orange
2 Tbsp. (2 envelopes) gelatin
Soak gelatin in cold water about 5 minutes. Put sugar
and boiling water in saucepan and bring to a boil. Add soaked
gelatin. Let boil 20 minutes. Add juice and coloring and turn
into a pan (first dipped in cold water). Let stand until firm.
You can make several layers using different colors. Cut in
cubes and roll in powdered sugar.

3 envelopes unflavored gelatin
1/8 tsp. salt
1 Tbsp. lemon or orange juice
few drops yellow or orange
food color
confectioners sugar
2 c. sugar
1 c. water
1 tsp. lemon or orange rind,
grated
Mix gelatin, sugar and salt in heavy pot. Add water.
Bring to slow boil and simmer without stirring for 10 minutes.
Remove from heat and stir in juice and rind. Add few drops
food coloring. Taste for flavor. May add more juice. Pour
into 8-inch square pan which has been rinsed in cold water but
not dried. Chill overnight. Cut into squares and roll each in
confectioners sugar. Makes 1 3/4 pounds.

Cranberry Orange Chex Mix
3 cups Corn Chex® cereal
3 cups Rice Chex® cereal
3 cups Wheat Chex® cereal
1 cup sliced almonds
1/4 cup margarine or butter,* melted
1/4 cup packed brown sugar
1/4 cup frozen (thawed) orange juice concentrate
1/2 cup dried cranberries
Heat oven to 300°. Mix cereals and almonds in large bowl; set aside. Microwave margarine, brown sugar and juice concentrate in 1-cup microwavable measuring cup, uncovered on High 30 seconds; stir. Pour margarine mixture over cereal mixture in bowl, stirring until evenly coated. Pour into large roasting pan. Bake 30 minutes, stirring after 15 minutes. Remove from oven, stir in dried cranberries; cool. Store in airtight container or plastic food-storage bag. 10 cups snack.
*Do not use spread or tub products.
