Chicken and Rice Casserole
1 tbs. oil
4 boneless skinless chicken breast halves (1 1/2 lb.)
1 can cream of chicken soup
1 soup can of water
2 cups Minute rice - uncooked
2 cups fresh or frozen broccoli flowerets, thawed
Heat oil in large non stick skillet on medium high heat.
Add chicken, cook 5 minutes on each side or until lightly browned.
Remove from skillet, add soup and water to skillet - bring to boil.
Stir in rice and broccoli.
Top with chicken; cover.
Cook on
low heat 5 minutes.
