Tofu Egg Salad
This recipe uses tofu rather than eggs.
Start with 1 package of tofu (found in the produce section)
Crumble the tofu with your fingers
add:
1/4 cup of mustard
1/4 cup of dill relish
1 tablespoon dried onion or 1/2 small fresh onion
2 teaspoons of garlic powder
dashes of salt and pepper
optional:1/2 cup mayonnaise or soy mayonnaise "Nayonaise&
Serve in pocket bread or wheat bread with lettuce and tomato
