Tofu Cheese Cake
make a graham cracker crust in a pie or cake pan:
3/4 cup graham cracker crumbs
5 tblsps melted butter
2 tblsps sugar.
set aside.
filling
- 3 eggs
- 1 tsp sugar
- one 8 ounces cream cheese or two cups cheese cake flavored yogurt.
- 16 ounces firm tofu
- 1 tsp vanilla
- 1 tsp lemon juice
blend all wet ingredients , pour into graham cracker crust.
bake in preheated oven at 325 degrees for 2 hours or until firm.
chill for 1-2 hours prior to serving.
note: for a change of flavor you can add 1 tsp almond extract to filling and 1 cup chopped pecans, and melted carob or semi sweet chocolate chips.
