Easy Gaspacho
Puree in a food processor (blender works too):
a cucumber
green peppers
an onion
Then add a can of tomato puree.
Refrigerate for a few hours to let the flavors mix.
You have to experiment to get the consistency that you like, but if it comes out wrong...too thin, blend in some cubed bread, to thick, place in blender a little longer.
Serve chilled; garnish with some diced cukes, green pepper and green onion.
