Moosewood Potato Salad Variation
Boil with skins on several red potatoes, cool in fridge.
Chop into your favorite potato salad chunk size.
Add chopped cucumber, chopped green pepper, chopped celery, small bits of carrots for some color.
Make dressing with yogurt, add a bit of cider vinegar, some parsley and dill.
Chill and eat!
