Date Nut Bran Muffins
- 5 cups sifted flour
- 2 cups sugar
- 5 tsp baking soda
- 1 tsp salt
- 2 cup all bran cereal
- 2 cup wheat germ
- 2 cup 40% bran flakes
- 2 cup chopped dates
- 2 cup chopped walnuts
- 1 cup cooking oil
- 4 eggs - slightly beaten
- 2 cup water
- 1 qt buttermilk
Sift together flour, sugar, salt and soda. Combine remaining ingredients in 6 qt. mixing bowl. Combine just to moisten. Store covered in fridge up to 8 weeks.
To bake -- fill greased muffin tins 2/3 full and bake at 400F for 20 minutes.
