Grilled Veggies
Cut zucchini, green and red peppers, mushrooms and onions into slices about 1/2" thick (mushrooms probably won't need cutting).
Mix with an oil and vinegar based dressing (Italian, Balsamic, etc.) which you have spiked up with a little more garlic, salt, pepper, or whatever it needed.
Lift the vegetables out onto the grill. Cook 5-10 minutes, checking occasionally.
Baste with a little of the dressing about half way through.
Even my vegetable-hating kids will eat this. Well, some of this. The mushrooms are still all mine!
