Black Bean & Corn Salsa
- 3 ears fresh yellow corn
- 3/4 cup water
- 3 tomatoes...peeled and diced
- 2 15 oz. cans black beans
- 2 jalapenos minced
- 1 cup fresh chopped cilantro
- 1/3 cup lime juice
- 2 firm avocados chopped finely
- salt/pepper to taste
cut corn from cob. place in pan with water and bring to boil. cook 7-10 minutes. drain.
mix in remaining ingredients and chill
