Mexican Meatloaf
- 1 1/2 pound ground beef
- 1 jar salsa (or make your own)
- 1 cup or so shredded cheddar cheese
- 1 egg
- 1 cup bread crumbs (or cracker crumbs....your choice)
separate salsa into 2 parts.
mix half salsa with all the other stuff
put half the meatloaf in a bread pan.
add some cheddar cheese and a little salsa.
add the rest of the meatloaf.
top with remaining salsa.
bake at 350 for an hour (basically until done)
top with remaining cheese and a little more salsa if you like.
let sit for a few minutes before cutting
