Chicken Parmesan
- 4 boneless/skinless chicken breasts (veal or eggplant can be used instead)
- 1-2 cup shredded mozzarella cheese
- 1/2-1 cup shredded parmesan cheese
- 1 jar tomato sauce (or homemade - its better!)
- bread crumbs
- flour
- 1 cup milk
- 2-3 eggs beaten
pound out chicken breast until flat
dip in milk then flour.
then dip in egg and then bread crumbs (don't ask me why the double dip - its just the way it is)
brown the chicken in a fry pan with olive oil until done, turning once
place chicken in baking pan and top with sauce and shredded cheese
bake until cheese melts
serve with pasta or on a crusty italian roll
