Lasagna by Love2Cook
- 1 lb. Italian sausage (I use spicy) cooked/drained
- 1 clove garlic, minced (or more to taste)
- 1 Tbsp. fresh basil (or 2 tsp. dried)
- 1-1/2 tsp. salt
- 1 lg. can diced tomatoes
- 2 6 oz. cans of tomato paste
- 1 Tbsp. grape jelly
- 10 lasagna noodles
- 2 eggs-beaten
- 3 cup cream-style cottage cheese (or ricotta)
- 1/2 cup grated parmesan
- 2 Tbsp. parsley flakes (dried)
- 1 tsp salt
- 1/2 tsp. pepper
- 1 lb. mozzarella cheese, sliced thin or grated
Set oven at 375 degrees. In 10" skillet combine first seven ingredients. Simmer for about 1/2 hr. to thicken into sauce. In separate mixing bowl, combine eggs, cottage cheese, parmesan, parsley, 1 tsp. salt, and pepper. Lay 5 noodles in bottom of 9 x 13 pan. Spread 1/2 cottage cheese mixture on noodles, followed by 1/2 of mozzarella, and 1/2 meat mixture. Repeat using remaining ingredients in the same order. Bake at 375 for 30 minutes, or make ahead, refrigerate, and bake for 45 minutes. Let stand for 10 min. before cutting and serving.
NOTE: If salt is a concern, omit salt in tomato mixture, and increase basil amount to taste. Fresh basil has a very salty taste. A salt substitute can be used in the cottage cheese mixture. Great leftovers - just reheat!
