Susan's "My Mom's Meat Loaf"
- 1 lb ground beef, (7 to 15% fat content)
- 1 egg beaten
- 1/2 - 3/4 cup bread crumbs, plain or flavored (such as Progresso Italian)
- 1/2 Cup Water or more to moisten and help hold ingredients together
- salt and pepper to taste
- 1 tbsp parsley flakes
- 1/2 finely chopped medium sized onion
Combine all ingredients and shape into a loaf, place in a loaf pan or baking dish (8 x 8), brushed lightly with oil or Pam to prevent sticking.
Top with an 8 oz can tomato sauce, I like Hunts, making sure all of meatloaf is covered, you can add a small amount of water to the pan to prevent drying.
Bake at 350 degrees for 1 hour, uncovered, or until completely cooked through.
Optional: Add 1 small can sliced or fresh mushrooms to top of tomato sauce, before baking.
Serve with mashed potatoes and string beans :)
