Pumpkin Roll
Beat 3 eggs for five minutes
Slowly add 1 Cup sugar
Stir in 2/3 Cup pumpkin
1 tsp. lemon juice
Mix together:
- 3/4 Cup flour
- 2 tsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. ginger
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
Fold all above into pumpkin mixture. Spread into greased and floured jelly roll pan. Top with chopped walnuts and bake for 15 minutes at 375.
Turn out on a towel that has been sprinkled with powdered sugar. Starting at the narrow end, roll towel and cake together. Set aside to cool.
When cool-unroll and spread filling. Reroll. Chill.
Filling:
- 1 Cup powdered sugar
- 2 3oz. pkgs. cream cheese
- 4 Tbsp. butter (margarine)
- 1/2 tsp. vanilla
Beat well until smooth.
