Corn Soup
- 1 pound cooked sausage cut into bite size pieces
- 3 cups frozen thawed corn
- 3/4 cup diced onion
- 1-2 tablespoons water
- 1 cup minced carrots
- 2 tablespoons finely chopped jalapeno pepper with no seeds!
- 1/2 teaspoon oregano
- 1/4 teaspoon thyme
- 3 cups chicken broth (canned or homemade works the same)
- 1 1/2 cup 2% milk
- 1/2 teaspoon salt
brown sausage if not already cooked. remove from pan and drain grease
add corn and onion to pan and cook until the onion is tender
puree 1 cup of corn/onion and set aside (add the water if needed to puree)
add carrots, jalapeno and spices, cook until corn begins to brown.
add chicken broth, milk and pureed corn
heat to boil.....reduce heat and add meat....simmer 15-20 minutes until done
