Patsy's Carrot Cake
- 2 cups sugar
- 1 1/4 cups oil
- 4 eggs
- 2 tsp. cinnamon
- 2 tsp. baking powder
- 2 cups all pourpose flour
- 1 cup chopped nuts
- 3 cups grated carrots
- 1 cup coconut
Mix all together. Bake 350 degrees for 1 1/2 hour.
Icing
- 8 oz. softened cream cheese
- 1/2 cup margarine
- 2 tsp. vanilla
- 1 box powdered sugar
- pinch salt
Mix all and ice cake
You can make your cake in a 9x13 pan, or a bundt pan. (Bundt pan, grease and flour.)
