Rock Candy
AS THIS SUGAR WATER EVAPORATES, IT FORMS A SWEET HARD,
CRYSTAL CANDY ON A STRING OR STICK.
1 1/2 CUPS WATER
6 CUPS SUGAR
FOOD COLORING
3 6-INCH LENGTHS OF STRING
BRING THE WATER TO A BOIL IN A SAUCEPAN. REMOVE FROM THE HEAT
AND ADD 3 CUPS OF THE SUGAR, STIRRING UNTIL IT DISSOLVES.
SLOWLY ADD THE REMAINING SUGAR, REHEATING THE WATER IF
NECESSARY.WHEN ALL THE SUGAR HAS DISSOLVED, POUR INTO THREE
HEATPROOF JARS OR GLASSES. STIR IN THREE DROPS OF FOOD
COLOURING INTO EACH JAR. TIE EACH LENGTH OF STRING AROUND THE
MIDDLE OF A PENCIL. LAY ATOP THE JARS SO THE STRINGS HANG
DOWN INTO THE LIQUID. CRYSTALS WILL BEGIN TO FORM IN AN HOUR
AND CONTINUE TO SOLIDIFY FOR SEVERAL DAYS. IF A LAYER FORMS
ON THE SURFACE OF THE WATER, BREAK IT. WHEN THE WATER
EVAPORATES, THE IS READY TO EAT..
