Yum Yum Cake
- 1 yellow cake mix (I prefer Duncan Hines)
- 4 eggs
- 1 small package instant vanilla pudding mix
- 1 cup club soda
Preheat oven to 350 F. Grease and flour a 13x9x2 cake pan. (You can use a 12x18x1 cookie sheet for a thinner cake.) Combine all ingredients in large bowl. Mix for 2 minutes on medium speed until well blended. Pour into prepared cake pan. Bake for 20-25 minutes or until cake tester inserted in center comes out clean. Remove from oven and cool on rack. Frost.
FROSTING
- 1 small package instant vanilla pudding mix
- 1 cup milk
- 8 ounces cream cheese, softened
- 9 ounces whipped topping (Non-Dairy topping will last longer without separating)
- 1 large can crushed pineapple, drained
- Coarsely chopped walnuts
- Coconut flakes (optional)
Mix together the pudding mix and milk; let stand until thickened. Mix together the cream cheese and whipped cream. Blend into pudding mixture. Spread on top of cooled cake. Top with pineapple, walnuts and coconut. Refrigerate until serving.
