Freezer Stuffed Potatoes
(makes 24 halves)
- 12 potatoes, baked
- 8 ounces sour cream
- 8 ounces cheddar cheese, shredded
- milk
- butter
- salt and pepper to taste
When baked potatoes are cool enough to handle, slice in half lengthwise, and carefully scoop out insides. Mix with a little butter, salt & pepper, sour cream, cheese, and enough milk to make desired texture. Spoon back into potato shells. Flash freeze and then transfer to freezer bag.
To serve: Bake in frozen state at 400* for about 20-25 mins, or until heated through.
