Vegetarian Sloppy Joes
(Yes, my son eats it right up and asks for seconds)
- 1 lb lentils
- 1/2 lb mushrooms, chopped
- 1/2 cup chopped fine celery, onion, and carrots
cook the veggies with water to cover for about an hour until the lentils are soft.
then spice with the following:
- 1/2 cup ketchup, and barbeque sauce
- 2 generous tbsp jamaican jerk sauce (recipe to follow)
simmer the sloppy joe mix until thick and correct for seasoning with salt and pepper.
Jamacian Jerk Sauce
- 2 jalapeno peppers, seeded and chopped (I use whatever peppers that are in the frig.)
- 1/2 cup chopped onion
- 4 1/2 TBSP ground allspice
- 1/2 tsp cinnamon and nutmeg and black pepper
- 2 cloves garlic
- 1 teaspoon freshly grated ginger
- 4 bay leaves
grind all ingreients to a firm paste
this is excellent for roasting any meat and adding to barbeque sauce
