Sweet Potato Soufflé
- 3 cups cooked, mashed sweet potatoes
- 1 cup sugar
- 2 eggs
- 1/2 cup milk
- 1 tsp vanilla
- 1 cup brown sugar
- 1 cup chopped pecans
- 1/2 cup margarine or butter
Combine sweet potatoes, sugar, eggs, milk, and vanilla. Mix well. Pour into buttered casserole. Combine brown sugar, flour, pecans and margarine. Spread over potatoes. Bake at 400 degrees for 30-40 minutes.
