MASHED POTATOES - BY SEVEN
Prepare mashed potatoes as you would normally, add salt to taste. Add 2 cups of sour cream (per 10 lb. Bag of potatoes) and chives (optional, or you could substitute them with sage). Put in buttered casserole dish and let sit in refrigerator over night. The next day, 45 minutes before the Thanksgiving meal, preheat oven to 350 degrees and place 1 Tblsp margarine on top. Cover and bake for 30 minutes or until thoroughly heated. If margarine melts on top then they are thoroughly heated.
