Turkey, Gravies and Sauces


BROWN SAUCE OR GRAVY

  • Pan drippings
  • 1 Tbls. Chopped green scallions
  • 1 Tbls. Parsley, minced
  • Flour (enough to thicken)

Use pan drippings (remove excess fat) of meat or game. To this add scallions, parley and enough flour and water to the mixture to thicken. Cook about 5 minutes. If desired add mushrooms and if you like gravy on the sweet side, add 1 Tbls. Current jelly.
