YANKEE GRAVY
- 1 cup milk
- 1 1/2 tsp flour
- 2 tsp. chicken fat (pan drippings)
- 1/2 tsp. salt
Melt fat and remove from heat (of pan drippings). Add flour, stir (whisk) until smooth. Return to heat. Add cold liquid all at once and cook, stirring constantly until thick. Cook over direct heat 5 minutes, stirring occasionally. Add salt. If you like it sweet, add sugar to taste.
