BANANA BRAN MUFFINS

2 c. 40% Bran Flakes cereal
1/2 c. 100% Bran cereal
1 1/4 c. flour
3 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. ground nutmeg
1/3 c. sugar
1 c. 2% lowfat milk
1/2 c. silken tofu
1 egg
1/4 c. vegetable oil
1 large banana, mashed
Soak the cereals in the milk. Then add remaining
ingredients. Mix just until all ingredients are moistened.
Batter will be lumpy. Bake at 350 degrees for 20 to 25 minutes in
well greased muffin tins or use cupcake liners. This will
yield 18 muffins; each has approximately 111 calories and 17
grams carbohydrates. (My kids like them better than cupcakes!)
